Farewell Cookie Week - Day 5

I apologize for not promptly posting on Friday but I have been busy! This was by far the best (read: only) cookie week I've ever had. Has anyone ever had bacon chocolate chip cookies? Because they are absolutely the most amazing cookie I have ever had in my life.



For those curious folks, the recipe is posted below. And, if you'd like to experiment with any of the other cookies I had during Farewell Cookie Week, let me know. I'd be happy to share the love.

BACON CHOCOLATE CHIP COOKIES

  • 1/2 cup unsalted butter, softened
  • 1/2 cup light brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/8 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chocolate chips
  • 5 strips of bacon, cooked and crumbled

Cream together the butter and sugar. Mix in the egg and vanilla. In a small bowl mix together the flour, baking soda, and salt. Slowly add the dry ingredients to the wet until fully mixed. Stir in the chocolate and bacon. Scoop dough onto parchment paper lined cookie sheet, press flat and bake at 350 degrees for 8-10 minutes. (Please note that with all things containing bacon, these will rapidly expand in size as they bake, so give them plenty of room on the cookie sheet) Enjoy!
